Vegetable Stock - alternative of Anchovy Stock
If you don't like fish or have allergies on fish, you can use vegetable stock instead.
It tastes clean, light yet delicate.
Ingredients : radish, zucchini, green onion, cabbage, onion, carrot, shiitake mushroom (what ever you have in your refrigerator except celery. If you put celery, the soup will taste like oriental medicine, which you won't want. 😆 )
How to make Vegetable Stock?
Very simple!
In a pot, combine water, put all vegetables you prepared and boil until they feel soft. Like when you make stew.
Once the ingredients become soft, it is done. You sieve them.
Clean, light yet delicate vegetable stock! 😎 You can keep it in the refrigerator and finish it within a week.
